Start Your Day with a Quick & Healthy Breakfast: Pomegranate Chia Pudding

In the spring, when I need a quick breakfast, I love chia seed pudding because I can make it ahead of time. The mixture of pomegranate and ginger is refreshing and bright. And the balance of sweet, sour, pungent, and astringent tastes curbs any cravings for snacks before lunch.

Chia seeds offer omega-3 fatty acids and B vitamins, nurturing both mind and mood. Pomegranates are not only delicious, but they also contain antioxidants that combat chronic disease and enhance cognitive ability.


Ingredients

  • 2 tbsp chia seeds 

  • 1 cup almond milk 

  • 1 cup pomegranate juice 

  • 1 tsp fresh grated ginger 

  • Honey or chopped dates to taste 

  • 1 cup fresh berries (optional for topping)


Servings: 2-3

Prep Time: 5 Minutes

Total Time: 8 hours

Preparation

  1. Mix all ingredients in a glass mason jar, cover, and leave in the fridge overnight. 

  2. Top with berries if you like. Enjoy!
